We de-stem and press the grapes directly when they enter the winery, we keep the lees in suspension for three days, then we drain and ferment at a low temperature in stainless steel tanks.
Once the alcoholic fermentation is finished, we remove the coarse lees and leave them on fine lees for 4 months.
Before bottling, it is clarified and slightly filtered, allowing deposits to form.
Yeasty character dominates the nose with bread, bread dough, brioche. Some yellow apple and light zesty character too. Light bodied, very fresh with a pleasant minerality in the medium long finish. Lime juice and lime peel, a bit of green apple, all adding to the refreching nature of the wine.
